Easy Green Tomatillo Salsa

Ingredients
  

  • 6 tomatillos, chopped into quarters
  • 1/2 small onion, chopped large
  • 2 garlic cloves
  • 1/4 of a bunch of cilantro, plus more for garnish
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper

Instructions
 

  • Heat oil on the stove.
  • Add the onions.
  • Let the onions cook, stirring occasionally.
  • When the onions are softer, add the tomatillos and garlic and stir occasionally.
  • After a few minutes, add the mixture to a food processor.
  • Add the salt, cayenne pepper and cilantro and pulse until it is well blended but still has some texture.
  • Refrigerate at least one hour before serving.
